I've been finding best luck with rigging the 3" Gulp pogie on a 1/8 oz jog head for most situations... ideal for fishing in 2 to 5 ft of water.
Once I plan to fish deeper than 5 ft (which isn't very often), I'll use a 1/4 oz jig head so it sinks faster.
The best retrieval method that I've found so far is a simple jigging motion in which I make a quick series of two jerks and then letting it sink back to the bottom before doing it again.
If there is a lot of bottom structure, then I speed up the retrieve so that the lure stays just above the hang-ups.
Note: If fishing shallow grass flats, it's best to keep the rod tip pointed straight up so you can keep the bait elevated above the grass.

As for leader, it all depends on what fish you're targeting.

Good Job on instruction videos. I've overcome the expense. (I'm "thrifty- not cheap, but Lincoln screams in my house.) MN is far from Fl but we love fishing too. I get entire hog hide from locker plant-FREE during deer hunting season (mix pork w/ venison).Cut it into squares just large enough to push flat into 5 gal.pail w/cover.(FREE from burger joints, pickles come in them, ask nice and you get stacks!) Now is the time and worst part, find metal barrel or something you can heat water w/ propane or wood fire. Outside turkey fryer is enough, just don't do it visibly to guests you invite to your pic nics . Check metal salvage yard. Semi wheel rims make beautiful fire pit and rebar on top makes kettle table $7-10 dollars (THRIFTY!) Heat water to about 160 degrees or so and place squares of hide loosely in hot water for 1-2 minutes. Wear insulated gloves under rubber gloves,HOT. Wife's favorite tongs disappear for couple hours. I use old hunting knife..paint scraper,putty knife or spare sharp lawn mower blade. Hair should scrape loose easily. If not put back in water for 30 seconds extra and try scraping again. It's not shaving, it's rubbing hair and roots pull out. If to many hairs get cut off, fish drop bait it doesn't feel right. When hide is clear of hair, rinse w/ garden hose and place in salt brine buckets. Don't over pack, so brine solution can move through squares when you turn bucket over to keep pickling salt from settling to bottom. BRINE- don't be afraid of using too much "Pickling Salt" NOT table or water softener salt. I mix it with water until a raw egg floats 1/2 way out of water. Won't freeze and burst bucket in wife's garage at 30 below. I leave it in buckets 6 months until I can cut shapes OUTSIDE (she's trained me well -Real Sweety) frogs,lizards,leeches,snakes,minnows and maggots and cut V-tails or tail wobblers on them. Pickling Brine for filling jars , covering baits. I wash and store up baby food jars to pickle jars and caps. Must be glass or you'll be buying new carpet in vehicle. I carry in separate small bucket or ice cream pail. All freshwater fish love that salt taste, but you can separate a few into a small jar with salt water and a shot of scent (have good luck with BaitMate or Unbelievable success w/Dr.Juice !) Rainbow Trout hit before I can hook up to down rigger and send down to thermocline 25-35 ft.
Important: buy needle nose pliers at dollar store, always make sure points of pliers close and tips line up with each other.(These are discarded off assembly line.)Drill through both tips with drill bit slightly smaller than a finishing nail(small thin 1-1/4 long). Probably need to center punch tip to start drilling. Also whichever ends up to be the bottom jaw, you may need to drill this a tad larger so nail doesn't bind. The nail can be gently sanded thinner to make a tight impossible to loosen fit. Use this to pre-punch all hide baits or you'll break hooks getting on or off ! Remember where you punch for hook will change action. Try tail hooking salamander or frogs; they'll glide nose forward natural travel on way down ,watch line close for strike on descent. Large baits tend to keep coil shape in jar, so double gallon or quart zip like bags, to keep salamanders and frogs flat. You can dye baits before salt brine, because salt locks dye in material colored. Che_ _//Thrifty foreign clothing ever transferred its' color onto something you liked ? Handful of pickling salt USUALLY locks color in these questionable (RED) items. Salt wash seperately. Test hand washing next time to see if color doesn't bleed into water. I have used many plastic baits and just haven't caught any good fish I will be sure to try this method.. and u live sort of near me (I would assume as in one of your videos I have Ben to the spot). I live in Tarpon springs fl and have an amazing spot and catch about 7 reds in an hour every time but I will try this out because live bait can sometimes take forever to get
